Gelatinization

When starch granules are heated in the presence of water, they absorb water, swell, and lose their crystalline structure, forming a viscous paste. This process is called gelatinization.

Fermentation refers to the microbial breakdown of sugars, saponification is the reaction of fats or oils with alkali to form soap, and caramelization is the browning of sugars under dry heat, none of which describe starch's behaviour with water and heat.

Hence, the process is gelatinization.
