The correct answer is

Both assertion and reason are correct but reason is not the correct explanation of the assertion

The Assertion is true: common salt, edible oils, vinegar, and sugar are indeed widely used as food preservatives because they create an environment (high salt/sugar concentration or high acidity) in which microorganisms cannot survive or grow, thereby preventing food spoilage.

The Reason is also true as a standalone fact: these substances do enhance the taste of food — salt and sugar act as taste enhancers, vinegar adds tanginess, and oils add richness.

However, the Reason does not correctly explain the Assertion, because the ability of these substances to enhance flavour has nothing to do with why they act as preservatives. Their preserving action comes from inhibiting the growth of bacteria and fungi by removing available water (through osmosis) or through their acidic/oily nature, not from taste enhancement.

Hence, both the assertion and the reason are correct, but the reason is not the correct explanation of the assertion.
