What makhana is. Fox nut is the puffed seed of the prickly water lily, Euryale ferox, a plant grown in standing water. The seeds are collected by divers from the bottom of ponds, cleaned, graded, roasted and then popped, which turns the hard black seed into the white puff sold in shops. It is a laborious process carried out almost entirely by hand, traditionally by the Mallah community.

Why north Bihar. The very feature that makes the region difficult for ordinary agriculture — permanently waterlogged land left by shifting rivers, which cannot be drained and cannot be cropped — is exactly what makhana needs. It turns a liability into a cash crop, which is why its promotion is a standing element of the state’s agricultural policy.

Why the crop has grown in importance. Makhana is high in protein and low in fat, gluten-free, and free of the taboo attaching to some foods, so it is eaten during fasts; it has found a large urban market as a healthy snack, and the improved variety Swarna Vaidehi and pond-based cultivation have raised yields well above the old practice of gathering from natural water bodies.

A note on the GI tag. Mithila Makhana was the fifth product from Bihar to receive a Geographical Indication, after Jardalu mango, Katarni rice, Magahi paan and Shahi litchi — a list worth carrying for this examination.
