LP System Activation Mechanism
The LP system's function relies on the enzyme Lactoperoxidase, naturally present in milk. Its antimicrobial activity is triggered by the combined action of:
- Hydrogen peroxide (H₂O₂): Acts as an oxidizing agent.
- Thiocyanate (SCN⁻): A substrate that gets oxidized.
When these two components are added to milk, the Lactoperoxidase enzyme catalyzes the oxidation of thiocyanate by hydrogen peroxide. This process generates hypothiocyanite ions (OSCN⁻), which are potent antimicrobial agents responsible for inhibiting bacterial growth.
