When blood is stored for a period, the iron in haemoglobin gets oxidized from the ferrous (Fe2+) to the ferric (Fe3+) state, forming methemoglobin, which is brown in colour and unable to bind oxygen effectively. This is why stored blood gradually turns brown over time.
